The steep, monumental streets of Osuna are the ideal setting for outdoor dining, taking advantage of the warm temperatures throughout the year to enjoy the town's typical dishes. The cuisine is rich in variety, with highlights including ardoria (a spicy stew), cocido ursaonés (a type of stew), repapalillas de bacalao (cod fritters) and guiso de tagarninas (a stew made with golden thistle), all dishes drizzled with the town's excellent olive oil. Notable desserts include the ancient gachas de San Arcadio (a type of porridge), aldeanas (a type of sweet bread) and specialities from the convents of La Encarnación, La Concepción and San Pedro.
